I loveeeee cruiser handlebars and I want to put the handlebars from my old bicycle onto this one, an electric bike.

"Strong" doesn't necessarily mean "bulky". There are lots of female athletes who are plenty strong, and plenty hot, ie, they don't look like the incredible Hulk. Runners, cyclists, and triathletes especially fall in the non-Hulk category, although they tend to be less chesty due to low body fat. Either you misunderstood your "coach" or he's more than a little confused. Women are not hormonally equipped to bulk up unless they spend excessive time and effort in the weight room.
Hiking and biking are both effective at burning calories, which of course is the objective when you're trying to shed fat. Neither does much in the way of building bulk muscle. There is no reason to choose. Do both, and more. You're more likely to keep up your exercise program if you're not doing the same old thing day in day out.
I'm not sure what your link has to do with your question. An electric bike isn't exercise.
